Sweet Apple and Walnut Chicken Salad

You can buy grilled and ready chicken at the grocery store—it’s a great addition to entrée salads when you’re short on time. The apples in this recipe can be red or green, blending nicely with the walnuts and cranberries in a zingy fall flavor your taste buds won’t soon forget. The Greek yogurt provides the same kick as mayo would, but without the fat.

Ingredients: 
1 cup cooked chicken breast, cut into cubes
1 cup chopped red apples, skins on
1 cup chopped celery ribs
1/8 cup dried cranberries
1/3 cup shelled and chopped walnuts
1/8 cup Greek yogurt
1 head romaine lettuce, about 6 cups torn
Instructions: 
  • Place the chicken, chopped apples, celery, cranberries and walnuts in a bowl. Toss in the 1/8 cup Greek yogurt.
  • In a separate bowl, arrange the lettuce leaves and top with chicken/apple mixture. Toss the salad and serve
