Sloppy Joes with a Tofu Twist

Everyone knows a Sloppy Joe when they see one! The red meat from the classic version leaves something to be desired in a healthy recipe. The good news is you can swap it out with tofu. Once you mix in a few key ingredients from your spice rack, you won’t miss the beef. The texture of tofu in this zesty tomato sauce is surprisingly close in flavor to the real deal!

Ingredients: 
2 teaspoons olive oil
1/2 small onion, peeled and chopped
1/2 green bell pepper, seeded, deveined and chopped
1 package tofu, drained and crumbled
1 (12 ounce) can tomato sauce
2 cloves minced garlic
1/2 teaspoon cumin
1 tablespoon chili powder
Paprika (optional)
Salt and pepper to taste
1 whole wheat hamburger bun
Instructions: 
  • In a sauté pan, cook the onion and bell pepper in olive oil until soft, about 8 minutes on medium heat.
  • In a large bowl, mash the tofu with a spoon or spatula until it resembles Sloppy Joe filling; mix in the tomato sauce.
  • Add the tofu/tomato mixture to the pan. Turn heat up to high, and cook about 5 minutes more. Sample the sauce, and add salt, pepper and paprika if desired.
  • Open up a Kaiser roll or big toasted bun and add the Sloppy Joe mixture. It’s ready to eat!
