Everyone knows a Sloppy Joe when they see one! The red meat from the classic version leaves something to be desired in a healthy recipe. The good news is you can swap it out with tofu. Once you mix in a few key ingredients from your spice rack, you won’t miss the beef. The texture of tofu in this zesty tomato sauce is surprisingly close in flavor to the real deal!
- In a sauté pan, cook the onion and bell pepper in olive oil until soft, about 8 minutes on medium heat.
- In a large bowl, mash the tofu with a spoon or spatula until it resembles Sloppy Joe filling; mix in the tomato sauce.
- Add the tofu/tomato mixture to the pan. Turn heat up to high, and cook about 5 minutes more. Sample the sauce, and add salt, pepper and paprika if desired.
- Open up a Kaiser roll or big toasted bun and add the Sloppy Joe mixture. It’s ready to eat!
