Skinny Broccoli Salad

This salad recipe, submitted by B. Dawes, R.N., is as easy to whip up as it is beautiful to look at. The ingredients range from colorful bell peppers, tomatoes and broccoli, to ripe black olives that pick up all the flavors in the dressing. Be sure to coat and toss your salad with 1 cup Fat Free Ranch; then divvy into salad bowls and enjoy!

Ingredients: 
1 pound fresh broccoli florets, about 2 cups
1 medium head cauliflower cut into florets, about 3 cups
1/2 cup sweet red peppers, chopped
1/2 cup green peppers, chopped
1 ripe tomato chopped
1/2 large red onion, chopped
1 cup ripe black olives, chopped
1/2 cup low fat shredded cheddar cheese
1 1/2 cup fat free ranch dressing
Instructions: 
  • Blanch broccoli and cauliflower and chop.
  • Add everything to a large bowl and add dressing and toss.
  • Chill in refrigerator for 4 hours.
