Savory Watermelon & Shrimp Kabobs

What’s more fun than watermelon on a stick? In this recipe sweet and spicy shrimp, grilled peppers and onion are complimented by chunks of surprisingly compatible watermelon. This fun backyard barbecue item is low in fat and high in protein—so what are you waiting for.  Pick up some kabob sticks and get over to the grill!

Ingredients: 
1 tablespoon honey
1 tablespoon orange juice
1 teaspoon paprika
1 teaspoon ground chipotle spice
1 teaspoon each, kosher salt and ground black pepper
½ pound large shrimp, peeled and deveined (about 12 to 15 pieces)
1 pound seedless watermelon, cut into 1-inch cubes (about 12 pieces)
For veggies:
1 tablespoon olive oil
1 onion, cut into enough slices to make a dozen kabobs
1 green bell pepper, cut into enough slices to make a dozen kabobs
12 grilling skewers
Instructions: 
  • Mix honey, orange juice, ground seasonings, salt and pepper in a large bowl. Add the shrimp and toss to coat. In a separate bowl, toss the veggies in olive oil for an even coat; the oil will help them cook better.
  • Thread shrimp, watermelon cubes and vegetables onto skewers.
  • Grill kabobs directly over heat source for 8 to 10 minutes, turning 1/4 rotation every 2 to 3 minutes, or until the shrimp is pink, and watermelon and veggies are cooked through and showing grill marks. Enjoy!
