Quinoa Salad

A lot of people think of quinoa as a grain, but it’s actually from a vegetable family that includes spinach and beetroot. Quinoa is fantastically good for you, high in fiber and especially protein. It’s no wonder quinoa is one of Nurse Manager, Kerri C’s favorite ingredients for an entree salad. Cheers to you, Kerri, for sharing this healthy recipe!

Ingredients: 
2 cups cooked Quinoa
1/2 cup diced tomatoes
1/2 cup diced cucumbers
1/2 cup feta cheese crumbles
1/4 cup balsamic vinegar
2 cloves chopped garlic
Chopped fresh parsley
Pinch of garlic powder (optional)
Salt and pepper to taste
Romaine Lettuce
Instructions: 
  • Mix all ingredients together, adding salt, pepper, garlic powder and fresh parsley to taste.
  • Refrigerate until chilled, and serve atop romaine lettuce
