Whole wheat pitas stuffed with shredded chicken breast and a curried salad of healthy grapes, flaxseeds and other fresh ingredients make for a filling lunch, or light summer supper; make enough to fill 2 pitas and share with a friend.
- Whisk together the curry and lemon juice.
- Place the shredded chicken meat into a bowl. Add the celery, red grapes, flaxseeds and shredded cabbage. Season with salt and pepper.
- Add the mayonnaise to the chicken salad and toss thoroughly.
- Use a serrated knife to split the pita ¾ of the way through. Stuff spoonfuls of the chicken salad into the pita. Top with bean sprouts.
