Pitas Stuffed with Chicken & Indian Salad

Whole wheat pitas stuffed with shredded chicken breast and a curried salad of healthy grapes, flaxseeds and other fresh ingredients make for a filling lunch, or light summer supper; make enough to fill 2 pitas and share with a friend.

½ teaspoon curry
Juice of 1 small lemon (about 1 tablespoon)
½ deli roasted chicken, skin and bones removed, meat shredded (about 2 cups)
1 medium celery rib, diced (about 1/2 cup)
1 small bunch seedless red grapes, cut in half (about 1 cup)
2 tablespoons flaxseeds
1 tablespoon light mayonnaise
1 large carrot, grated (about ½ cup)
Salt and freshly ground pepper
2 whole wheat pitas
Bean sprouts (optional)
  • Whisk together the curry and lemon juice.
  • Place the shredded chicken meat into a bowl. Add the celery, red grapes, flaxseeds and shredded cabbage. Season with salt and pepper.
  • Add the mayonnaise to the chicken salad and toss thoroughly.
  • Use a serrated knife to split the pita ¾ of the way through. Stuff spoonfuls of the chicken salad into the pita. Top with bean sprouts.
