Chicken Noodle Soup

This super easy recipe is amazing. It’s chocked full of goodness, yet there’s really not much to it. Low fat, low calorie and always satisfying, this homemade chicken soup is even better with a dash of lemon zest and rosemary!

Ingredients: 
4 cups chicken broth
1 (6 to 9 ounce) skinless, bone-in chicken breast
2 medium carrots, peeled, trimmed and chopped, about 1 cup
3 medium celery ribs, sliced, about 1 cup
1 white onion, peeled and chopped, about 1 cup
3 ounces uncooked medium egg noodles
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1 handful fresh, flat-leaf parsely, finely chopped
Optional: pinch of lemon zest and rosemary sprig
Instructions: 
  • Combine the first 3 ingredients in a large pot over medium-high heat; bring to a boil. Reduce heat and simmer for about 20 minutes. Remove chicken from pan; let stand for 10 minutes and separate from bones; discard bones. On a work surface, cut chicken into bite-sized pieces and return to soup pot.
  • Add carrot, celery, onion and parsley to the pot; cover and simmer for 10 minutes. Add noodles, and simmer about 5 minutes more. Add chicken, salt, and black pepper; cook for 2 minutes or until noodles are done. Add a sprig of rosemary and dash of lemon zest for extra flavor!
