Gnocchi are pasta dumplings made with potato, and pair extremely well with a savory, homemade sauce. Choose in season-veggies and sauté them in a pan to create a rich, tomato sauce topping; top it all off with pine nuts and fresh parmesan, and you have a healthy meal that truly satisfies. Use this recipe as more of a guideline than a rule.
- In a stock pot, boil the gnocchi according to package directions. Drain gnocchi in a colander and return to stock pot; season with salt and pepper. Reduce heat to low to keep warm.
- Pour olive oil into a skillet. Add the canned tomatoes, all of the veggies, pine nuts and basil, cooking on high heat about 5 to 8 minutes.
- Using a large spoon, transfer contents of skillet to the stockpot containing the gnocchi. Sprinkle the parmesan in and give a good stir. Enjoy!
