Delicious Winter Lentil & Brown Rice Soup

The layering of ingredients in this “soup to go” jar is so colorful, and the finished product tastes great—all it requires is boiling water, as its heavily seasoned and ready to eat in about 30 minutes . Use brown rice instead of white to increase this fiber-rich meal’s health benefits.

Ingredients: 
2 packets or crushed cubes chicken bouillon
1/3 cup brown rice
1/3 cup red lentils
1 tablespoon dried parsley
1/2 teaspoon ground black pepper
1 teaspoon poultry seasoning
1/3 cup green lentils
Instructions: 
  • Bring 2 tablespoons olive oil and 8 cups water to a boil in a large pot.
  • Pour in the contents of the jar; you may add 1 cup, each, celery and cubed chicken if desired.
  • Reduce heat to medium and simmer until the lentils are tender, about 30 minutes.
