This is an ultra-refreshing treat, packed with complex flavors, and loaded with vitamins and nutrients! Simply chop up the ingredients and toss them into a blender. Gazpacho is best when it’s chilled, but who says you can’t enjoy it right away? Flavor adjustments, like temperature, extra pepper or splash of lemon juice are entirely up to you!
- Combine ingredients in a large bowl, and toss so that all the vegetables get an even coat of the olive oil and red wine vinegar.
- Place all of the ingredients into a blender and pulse to combine; desired texture is just a little bit chunky.
- Once blended, place the gazpacho (you can keep it in the blender with the lid on if you wish) in the refrigerator for at least an hour, or until chilled.
- Garnish with crumbled feta cheese or garnish of your choice, like fresh cilantro and avocado slices. Enjoy!
