Chocolate & Peanut Butter Protein Balls

This healthy dessert looks like it came from the nearest doughnut shop, but packs a high-protein punch and is too low-fat to be mistaken for a doughnut hole, though it does look like one!  Healthy Careers thanks Christina K. for submitting her yummy recipe, perfect for a sweet treat at lunch, or passing out to friends in the break room.

Ingredients: 
1 cup Quick oats
1/2 cup peanut butter or almond butter
1/2 small chocolate chips
1/2 cup flax seeds
1/3 cup honey or agave
1 teaspoon pure vanilla extract
Instructions: 
  • In a large bowl, mix all of the ingredients together until you have formed a large ball.
  • Place the ball on a cookie sheet lined with parchment paper and refrigerate for 2 to 3 minutes
  • Remove ball from refrigerator, pulling pieces off that are big enough to shape into small balls with your hands; continue shaping until 8 to 12 balls are formed.
  • Place in an airtight container and serve when you are ready to eat!
