Avocado & Fried Egg Breakfast Muffin

If you remember breakfast sandwiches from the local drive through and miss everything about them, but the saturated fat, this is a super healthy alternative! Eat your avocado and fried egg on an open face English muffin with knife and fork or enjoy it sandwich style. Either way, you’ll need a napkin!

Ingredients: 
1 whole-grain English muffin
1 egg
1 tablespoon Extra Virgin olive oil
Half an avocado, seed removed, peeled and mashed
Salt and pepper to taste
Instructions: 
  • Add the olive oil to a skillet. Adjust heat to high and cook one egg the way you like it, over easy, sunny side or scrambled.
  • In a small bowl, mash half of a peeled avocado into a paste. Add salt and pepper.
  • Cut 1 English muffin in half, and toast both sides to golden brown in an electric toaster.
  • Spread the avocado onto each side of the muffin. Place the cooked egg on top of one side, and use the other side of the muffin to build a sandwich. Enjoy!
